I enjoy getting off the grid, too. One of my favorites is west of Clear Creek Reservoir along Clear Creek. I recommend high clearance vehicles if you want to take the roads to the trail heads. Depending on the time of year, some areas see a lot of use (don't recommend Forth of July). Other times, you can have the whole place to yourself. The fishing for brookies is usually very good the higher you go up. It is also a great place to backpack to some more remote places, but those you'll have to find on your own. ;D

There are many places in the Indian Peaks Wilderness if you are willing to backpack it in. Go to the Boulder Ranger District office for trail descriptions, maps, and you'll need a permit for $5. The popular spots fill up early, so get your permit about a month in advance.
